Rustica

The Rustica is at the heart of our range. Our most affordable oven. Designed by us and made here in the UK by our own craftsmen. If you are looking for a wood burning oven that embodies all the qualities of a traditional wood oven look no further. Based on traditional Italian pizza oven designs but manufactured from 21st century materials.

Neo

The Neo is our “next generation” oven. At its heart the same tried and tested design embodied in our Rustica. However if you are looking for a traditional solution but want the extra benefits of full insulation and weather resistance look no further the Neo has it all. Again designed by us and made here in the UK by our own craftsmen.

The Clementi Range

The wood burning ovens produced by Clementi offer a sophisticated modern aesthetic. First class workmanship, superb quality with amazing cooking capability. The Family oven is at the hear of this range. 1. Heat up time is not a simple linear line. The guides given are approximate but realistic times. The best times are achievable in ideal conditions. Eg if lighting up the following day after using  the oven. We often do this to make a breakfast pizza après party!

Successful lighting is dependant on the quality of wood used and crucially how dry it is, kiln dried is the key here. A big factor is the oven and external temperature. If its minus 5 out it will longer to get the oven to heat up. If the oven is damp the moisture must be driven out before it starts to get towards cooking temperature. A warm dry oven will heat up much faster than a cold oven at the start of the season when it may be damp after a winter standing.

Its almost not a relevant question. Pizza will cook in around 90 seconds at 400C. This is quicker than you can prepare the base. In practice you are more likely to cook 1 large pizza or maybe 2 medium pizzas at a time.

3. Heat retention like heat up time is not linear. The external temperature will have an effect. As will any embers you leave in the oven. Temperature will fall off quickly from high heat, 400C, and slowly tapper off to the lowest useful temperature of around 140C. Timings are typically average for a warm summer day. Based on temperatures falling from 400C to 140C.

Just wanted to tell you the pizza oven was delivered on Friday evening, great! It was assembled yesterday and has had 2 firings, up to 50c & 100c (cold before the second firing). Its covered now as we’re having heavy rain 🙁 Initial thoughts – easy assembly, great design and very attractive. (Happy man)

Still building base structure and still a little way off finishing. But plan to have it finished by the end of the summer. Thanks for insulation tips. Party went well, cooked 20 pizza’s where I’d only cooked 1 previously the night before. Talk about cutting it fine! Oven looking super, few hairline cracks but I know that’s to be expected! Made dough last night, because tonight is pizza night before the weather changes. Away out to light this baby, love it I’ll stay in touch and send you some pics of the finished pizza area.
